Preparing Tofu
- If you buy fresh silken tofu not in a sealed container, gently rinse it under running water.

- Shrimp: Peel, remove heads, devein, then rinse the shrimp meat thoroughly and drain.
- Squid: Clean the ink sac, remove the skin, rinse thoroughly, then score parallel lines on the squid body.
- Enoki, King Oyster, Oyster Mushrooms: Trim, rinse thoroughly under running water, and drain. Cut enoki and oyster mushrooms into smaller pieces or halve them as desired.
- Carrots: Trim ends, peel, and cut into small round slices about 1cm thick, halving larger pieces.
- Baby corn: Rinse thoroughly under running water and drain.
- Bok choy: Remove any damaged leaves and roots. Rinse thoroughly under running water and drain.
- Ginger: Peel, rinse thoroughly, and drain.

Blanching Seafood and Vegetables
- Place a pot of water on the stove, add ½ teaspoon of salt and ginger, and bring to a boil.
- Add mushrooms and blanched for about 2 minutes, then remove and drain.
- Briefly blanch bok choy and baby corn in boiling water for about 2 minutes, then remove and immerse in cold water.
- Lightly blanch shrimp and squid in simmering water until just cooked through.

Prepare the Sauce
- Heat 1 tablespoon of cooking oil in a pan. Once hot, add minced garlic and sauté until fragrant.
- Stir in 6 tablespoons of ketchup and 3 tablespoons of oyster sauce, continuously stirring over low heat. Continue by adding 50ml of water, ½ teaspoon of salt, 6 tablespoons of sugar, and 2 teaspoons of sesame oil.
- Stir well until the mixture is dissolved, then turn off the heat.
- Note: Only simmer over low heat to allow the mixture to boil gently and evenly without drying out or burning.

- Preheat the air fryer to 180°C (350°F) for 5 minutes to ensure the cooking chamber is hot and free of moisture, which could affect the dish.
- Place a sheet of aluminum foil on the air fryer tray. Arrange the tofu and blanched vegetables, then pour the sauce over them. It’s recommended to place softer ingredients like tofu and seafood first, followed by vegetables, to ensure all ingredients cook thoroughly.
- Seal the foil packet, place it in the air fryer, and bake at 170°C (340°F) for 20 minutes.
- After about 15 minutes, you can open the air fryer to check and gently stir the ingredients inside.
- Once finished, the air fryer will signal. Check that all ingredients are soft and cooked to your liking.
