Step 1: Prepare the Ingredients
- Clean the carp, cut into thick pieces, and marinate with 1 teaspoon of seasoning powder, 1 teaspoon of salt, and 1 teaspoon of pepper for about 15 minutes to let the flavors soak in.

- Wash the fresh tea leaves, place half at the bottom of the pot, and steep the other half in water. Clean and thinly slice the galangal. Thinly slice the chili.

- Layer the pot with tea leaves, followed by galangal, ginger, pork, carp, and top with more galangal. Pour in the green tea water until it just covers the carp. Add caramel coloring for color.
- Add ½ small bowl of fish sauce, 1 teaspoon of seasoning powder + 1/2 teaspoon of sugar, stir until dissolved, and pour over the carp.
- Place the pot on the stove, bring to a boil over high heat for about 5 minutes, then reduce to a simmer and braise for about 45 minutes until the pork and carp are tender and well-flavored. Tilt the pot occasionally to ensure the fish sauce is evenly absorbed, and simmer until the liquid is reduced and the carp turns a dark brown color.
